This delicious Rocky Road Ice Cream Pudding is a great alternative to a traditional Christmas Pudding, it’s easy to make and you can add fresh fruits and nuts or other favorites inside and on the top instead.
Here are the ingredients for reference
- 16 chocolate biscuits
- 1.25 litres softened vanilla ice-cream
- 1 cup vanilla custard
- 1 cup mini marshmallows
- 1/4 cup desiccated coconut
- 1/4 cup granulated nuts
- 1 cup frozen raspberries (roughly crushed)
- chocolate Ice Magic, sprinkles and silver cachous, to decorate
- Vanilla custard, to serve
